The benefit of using coffee grounds as fertilizer is that it adds organic matter to the soil, improving drainage, water retention, and aeration in the soil. Ground coffee will also help beneficial microorganisms for plant growth to thrive, in addition to attracting earthworms.
Many people feel that ground coffee lowers the pH (or raises the acidity level) in the soil, which is good for acid-loving plants. This only applies to unwashed ground coffee.
Fresh coffee is acidic, used coffee grounds are neutral. If you rinse the ground coffee, it will have a pH close to neutral at 6.5 and will not affect the soil's acidity levels.
